Moist Chicken Ala Len

Purchase a family pack of thigh drums from Gordy's.

Line bottom of roaster pan with celery stalks and a half inch water.

Place the chicken skin down in the pan.  Salt pepper liberally.

Place celery stalks on top of chicken.

Close lid place in oven for 1 hour at 325 degrees.

During that hour make the moist.

6 tablespoons virgin olive oil

salt pepper again

5 cloves minced garlic.

One medium onion roughly diced

teaspoon sweet paprika

teaspoon hot paprika

Stir concoction 

Let ingredients steep for that hour.

Put moist on chicken

Close up again for 30 minutes.

take lid off and roll skin up to crisp skin and turn oven up to 390 for 10 minutes and there you have it.

Will sever with steamed cauliflower with sharp cheddar cheese melted over it.

Final product

Gluten and carb free
